As I was bought up in the UAE , since childhood i am trying a lot of cuisines especially flavors of middle east.
But just recently i tried iraqi cuisine for the first time. I had soups, kebabs, salads and starters but the main dish that i loved was this rice. Quzi is a rice based dish with big shank of slow cooked lamb served with roasted berries, nuts & vegetables .The meat is cooked in large pit for hours . Shoulder piece preferably.
Here i tried to imitate the flavors and i did succeed , Alhumdulillah!
Ingredients you’ll need:
- 3 cups basmati rice ๐
- 1 large onion
- 1 carrot ๐ฅ
- 1 potato ๐ฅ
- 1 kg Lamp ๐
- 1 cup green peas
- Olive oil
- Nuts(almonds, pine nuts) , raisins
- Zafran/saffron
- Dried lemon
- 1tsp garam masala
- 1tsp pepper
- 1tsp chilly powder / paprika
- Salt
Method:
Heat olive oil, add sliced onion saute well . Add mutton. Add 1tsp garam masala and 1tsp pepper , add salt ,water and cook mutton until tender. It will take about 2-1/2 hours.
Remove mutton from the stock and keep aside.
Wash 3 cups of basmati rice and soak for 20 mins.
In a pan , add ghee/ olive oil. Add the rice. Fry the rice well. Add in 6 glass of hot mutton stock or boiling water,1 dried lemon.Add yellow food colour /safron and salt. Cook rice .
Chop potatoes and carrot into cubes. Soak almond in hot water and peel them.
Fry vegetables including frozen green peas. Fry nuts and raisins too.
Marinate boiled mutton with pepper, chilly powder, garam masala
Fry the marinated pieces in olive oil and keep aside.
To make the sauce aka chutney ;
- 2 Tomato๐
- Coriander
- 1green chilly
Place all the 3 in blender n blend well without adding water. Add salt
Now its time to serve the Quzi .
